WHAT CHEF TILAKRAJ HAS TO SAY;
"I came from Delhi sixteen years ago, after four years in the middle east i arrived in Egypt. The cuisine that I create for the Bombay is authentic north Indian food. With traditional clay tandoori ovens i can make the famous and very popular tandoori chicken as well as fresh naan bread.
I also make a lot of different sauce based dishes such as carachi gosht, which is tender lamb cooked in a rich and delicious sauce. How much spice is added in any dish is up to the guest, as our waiters will ask how hot they prefer their food to be. The menu also holds a number of vegetarian dishes.
To acheive authenticity, I have a number of spices imported from India, such as melonin massala or Jawatri powder. very soon we will be expanding our menu even further to offer even more of my favorite dishes from the regions of India"
